Waitrose tips produce of the future

Waitrose is tipping a seafood-flavoured mushroom and two new berry varieties as the produce of the future.

Canadian lobster mushrooms and locally grown, organic vegetables could be staples of future menus, research by the supermarket suggests.

When the retailer’s food buyers were charged with the task of identifying upcoming food trends, they suggested the pink mushroom with a seafood flavour and two new types of berries to make a big impact in UK stores.

Saskatoon berries are said to be the “new blueberries”, while Cloudberries contain four times more vitamin C than an orange and can be used in beer and chocolate.

A Waitrose spokesman told The Telegraph: “Montreal and Vancouver are becoming the foodie cities of choice [and this is] encouraging people around the world to experience some of the delights of Canadian cuisine.”

Looking back at the previous decade, they highlighted local, seasonal, and organic foods as the most influential food trends, as well as the rise in Fairtrade products.
