Student bags Bramley prize

Steven James from Thames Valley University has beaten off fierce competition to whisk away the top prize at the national Bramley Bursary catering contest.

He wins a once-in-a-lifetime prize placement at the kitchens of Michelin-star chef Angela Hartnett, at the newly refurbished Connaught Hotel in London’s Mayfair.

Judges commended James’ ‘Caramelised Bramley Apples with a Pistachio Financier and Cherry Ripple Ice Cream’ for its creativity, innovative blend of tastes - which highlighted the flavour of Bramley - and for the chef’s ability to use Bramley in a variety of ways.
