A leading fresh produce supplier to the foodservice sector is getting serious about innovation.

Pauleys, part of Brakes, has recruited a new team to look at innovation and new product development.

Jadon Spick, business development manager, said: “The real challenge for us is to come up with innovative and mouth-watering new products while also taking into consideration the busy kitchen environment.”

Pauleys will be looking to improve on areas such as time and waste for fresh produce: “The products under development are all very practical. We’re looking at the constraints that the average chef is under and we’ve created a range which requires very little preparation time in the kitchen and uniform in size, reducing wastage and basically making life a lot easier,” Spick said.

Simon Crew, NPD manager, said: “We work extremely closely with our customers. We analyse the products that they currently buy from us, look at their menus and the type of meals that are on offer, how they’re prepared and, once this information is digested, we then work out the cost of each meal, giving them complete portion control.”

The team is focusing on a range of seasonal products, which will be launched, starting with spring salads and exotic dressings.
