Protecting food supplies to the 2012 Olympic Games from potential “terrorist threats” is paramount, LOCOG’s Jan Matthews (pictured) told the Re:fresh conference.

Matthews, head of catering for the event, said that traceability of food would be paramount at the largest peace time catering operation in the world.

“We have one of the smallest Olympic parks in history and the most overlay and food is a key component; this is no small feat,” she told delegates.

Dismissing the assumption that fast food will be in abundance at the Olympics, Matthews confirmed that healthy British food will be the first option.

Organics is being given precedence, as well as Fairtrade, with 2.7 million Fairtrade bananas needed. A meet the buyer exercise was also held yesterday.
