The ARS scientists have created an edible coating of apple puree and oregano oil which acts as a natural anti-bacterial agent.

Most methods of cleaning fresh produce have been shown to help kill bacteria, but researchers found that many are not effective in destroying E. coli. Following the outbreak of the deadly bacteria in spinach in the US, the ARS researchers have been looking at how to prevent a recurrence. They say their films provide a more concentrated, lasting method for killing the bacteria.

Research methods involved testing a variety of purees and oils and while cinnamon and lemongrass oils in solutions of apple puree also proved effective in reducing the growth of bacteria, oregano was the most successful wiping out more than half of E. coli.

According to the research service, the wraps can be used by processors and suppliers of prepared produce, either as sprays or dips.

The one downside appears to be that food treated with the product retains a hint of the flavour of oregano.
