Bramley winner unveiled

A new Bramley classic recipe winner has been announced.

There was an overwhelming response to the New Bramley Classic Challenge and in the search for a new classic Bramley recipe to sit alongside the apple crumble and apple pie.

Mark Hix, celebrity chef and Adrian Barlow, ceo of the Bramley Campaign, attended a judging day at Hix restaurant in London to select the winning entry.

The Bramley Fidget Pie, created by Ingelin Rees-Roberts, an administrator from Cambridge, was selected as the winning dish.

Ingelin’s new classic recipe combines the flavours of cider and bacon with the tangy taste of Bramleys, topped with a light and crisp pastry to create the perfect pie.

Ingelin’s prize is a cookery master-class with Mark and the Bramley Fidget Pie is now on the menu at Mark’s restaurant, Hix.

Sheila Hayman’s Blackened Bramley Snow was named runner-up.

A spokesperson said: “Bramley Apple Week has been a triumph. The media has supported the campaign with coverage appearing in publications such as The Times, BBC Good Food, and Hello! Mark Hix’s special Bramley recipes have proven to be extremely popular appearing in publications such as People’s Friend, Cook Vegetarian and Great British Food magazines.

“Antony Worrall Thompson has also acted as an unofficial spokesperson for Bramley Apple Week this year, with his recipe for Bramley Tarte Tatin featuring in regional newspapers. Antony has also marked Bramley Apple Week by giving Bramleys pride of place on the menus at his restaurants.”
