The increasing demand for fruit ingredients in the baked goods sector has lead to significant outlay by the UK’s leading fruit ingredient supplier, JO Sims.
The company’s investment in new technology, additional warehouse capacity and specialist applications reflects the rising consumer demand for cranberry, blueberry, açai and other berry fruits.
Douglas Mackay, general manager for ingredients at JO Sims, said: “These investments will allow us increased scope to satisfy our customers’ demand to add value by including fruit in their products.
“Consumer interest in healthier alternatives to traditional, high fat products continues to rise and we are keen to offer expert technical and formulation advice in addition to our extensive range of fruit ingredients.”
Joan Kehoe, technical sales executive with specific responsibility for bakery, added: “With the resources now available, JO Sims can offer tailored solutions to meet our customers’ individual needs.
“We can offer a wide range of support to NPD functions. Sampling and trials can be supplied, alongside practical advice on the performance of different fruit ingredients in baked goods. We can help food manufacturers overcome the technical difficulties of fruit inclusion, including moisture migration and colour bleed.”
Many fruits have recently gained popularity in baked goods.
The blueberry comes in a variety of formats and is a popular choice as a result of raised awareness about its health benefits. The cranberry is tolerant to the most processes, and is also widely used in muffins, biscuits, cakes and bread.
JO Sims also supplies exotic fruit ingredients for added taste and appeal, including pineapple and mango, as well as more common fruits such as apple, strawberry and raspberry.
