Former Flamingo UK MD John Hackett’s fraud case is due to be heard in Luton Crown Court on 3 August.
Hackett has pleaded guilty to four charges of theft and fraud.
He was dismissed from Flamingo UK on 28 January last year following an internal investigation at the flower and vegetable supplier.
The 41-year-old Bedfordshire man is charged with theft by employee, fraud by abuse of position and two counts of converting criminal property. He has entered a guilty plea for all four charges.
He was first arrested in March 2011 and bailed several times during the police investigation.
