Greenvale is hoping the Mayan Gold will get consumers in festive spirits

Greenvale AP is encouraging caterers to offer “a really special roast potato” with Christmas menus - with a golden product which isn’t even a potato.

The company's Mayan Gold is not technically a potato, it is a phureja, the vegetable from which modern potatoes evolved. Developed by Greenvale AP, Mayan Gold is available from wholesale distributor Sharrocks in 10kg catering packs.

Mayan Gold has a bright gold colour, and is less dense than a modern potato, so it cooks in only half the time. It can be roasted, chipped, sautéed or steamed but is not suitable for boiling.

Another benefit that Mayan Gold phurejas have over the modern potato is that they need no added butter for flavour, so they will appeal to the health conscious.

Greenvale is hoping to capitalise on the phurejas’s “curiosity factor” during its UK season from October to February.
