China is becoming more quality conscious but isn't prepared to pay the higher prices to get the fruit it wants. That's what SVA Fruits' David Smith says in a conversation with me at his office next to Huizhan market in Shanghai. China's fresh produce market has grown up quickly, indeed it seems to be taking on the characteristics of every developed market elsewhere in the world.
