Mission Produce has unveiled a new size interchangeability chart that breaks down avocado yield by size and preparation.
The chart is an expansion of the grower-packer-shipper’s foodservice guide ‘AvocaDOs and DON’Ts’, which is designed to help its foodservice partners manage their avocado category.
“Because fruit sizing varies throughout the year, we created a solution on how to order and prepare avocados based on our customers’ needs,” said Bryan Garibay, foodservice sales manager of Mission Produce.
“By using the size interchangeability chart in conjunction with utilising what the trees are producing, our customers will mitigate potential supply challenges while saving money on food cost.”
The chart allows the company’s partners to predict the yield for different avocado sizes, in different forms including sliced, diced, mashed and pureed. Mission Produce said this will enable greater flexibility based on inventory and tree production.

The company said one of the main appeals of the chart is that it is visually simple, and it communicates avocado measurements in a way that foodservice operators to switch fruit sizes with ease.
